Previously, I kept cooking ordinary chicken noodles, but not so long ago turkey wings appeared in the store for sale for only 150 rubles kg, and only the shoulder. There was no way I could pass up such a lucrative offer. That's why I started buying them. There is a lot of meat on the wings, but there is also fat. I cook this part of the turkey two ways. The first one is baked in the oven, all the fat is rendered out, the second one I cook delicious and rich noodles, and sometimes other soups. The broth on the wings turns out incredibly rich, with a high protein content; when it cools, it even hardens into jelly, so you can safely cook jellied meat from this part of the turkey.

Turkey noodles are incredibly delicious.

Take three wings for a three-liter pan. In turkey they are very large.

We wash them and trim off excess fat from the skin. (then it goes into my dog’s porridge)

Like that.

Fill the prepared meat with water and put it on fire.
Immediately I peel the onion, throw it whole into the broth, and add spices.

As it boils, I turn down the noise and cook for at least an hour, maybe longer, until the turkey is tender.

I then throw away the onion; the onion is only needed for flavor.

We take out the meat and cool it. It is better to discard the skin, cut the meat into small pieces.
Three wings yield a lot of meat. Turkey meat is tasty, not like chicken.

Neither potatoes nor carrots are included in classic noodles. I recently discovered Maggi frying - made from onions and carrots, it is without glutamate, just dried fried vegetables and spices, I began to add a tablespoon of it for aroma and aesthetics. The broth looks more interesting and adds additional flavor.

As for the seasonings, I liked “Kotami” - a mixture of ground peppers.

The addition of these seasonings gives additional aroma and hot-spicy taste to the broth.

Add the meat to the broth, seasonings, and herbs. I have fresh parsley prepared with salt, I add it.


The broth still turns out fatty, but all the fat floats on the surface, I remove it. After cooling, the remaining fat is easy to remove completely.

In the refrigerator, the broth turns into real jellied meat; you could have added it to the water at the end of cooking, since it had boiled away.
There was a lot of meat, not enough broth. But you can hardly hear complaints from men about this.


That's it with the broth. Where are the noodles, you ask? The correct way is not to cook the noodles in broth, but to boil them separately. And add it not to the pan, but to the plate, unless, of course, you like soggy pasta.

For this soup I buy expensive Italian thin noodles made from durum wheat. It is, as expected, moderately elastic and does not stick together.

Now everything is ready, you can serve.

Place noodles on a plate.

  1. Place the turkey meat in a container and pour water into it.
  2. Bring to a boil, skim off the foam and cook over low heat for 1 hour.
  3. Add vegetables to the meat and leave to cook for another half hour.
  4. After this, remove the ingredients and strain the broth.

Turkey soup recipes

In terms of the amount of useful microelements, turkey meat is much superior to chicken, which is more often used for soups. From the latter you can prepare broth for the first course. Turkey meat is added later. To prepare a richer dish, include the following ingredients: beans, noodles, peas, potatoes, cauliflower, noodles, rice or broccoli.

With turkey meatballs

You can add not just turkey meat to the soup, but meatballs formed from it. The ingredients needed are:

  • onion – 1 pc.;
  • carrots – 2 pcs.;
  • potatoes – 2 pcs.;
  • turkey meat – 0.2 kg;
  • quail egg – 2 pcs.;
  • garlic - optional.

The soup preparation algorithm looks like this:

  1. Rinse the turkey and place in a saucepan with water. When it boils, cook for another half hour.
  2. Pour about 0.7 liters of water into another pan and place on fire.
  3. After boiling, add grated carrots and chopped onions.
  4. After the water boils again, add the potatoes and garlic. Cook everything together for another 20 minutes.
  5. Cool the boiled turkey meat and grind it twice using a meat grinder.
  6. Mix the minced meat with eggs, form meatballs as shown in the photo.
  7. When the potatoes in the soup are half ready, add the meatballs to the vegetables.
  8. Wait for the meat to float to the top, cook for another 2 minutes. After this, season with salt and bay leaf.

With vermicelli

For this recipe you will need the following ingredients:

  • white turkey fillet – 0.5-0.7 kg;
  • potatoes – 3-4 pcs.;
  • web vermicelli from durum wheat - 1 tbsp.;
  • onion – 1 pc.;
  • carrot – 1 pc.;
  • bell pepper – 1 pc.;
  • dill, cilantro or parsley - 1 bunch.

To prepare the soup, use these step-by-step instructions:

  1. Cut the onion into half rings, fry in melted butter or vegetable oil until transparent.
  2. Then add grated or cut into strips carrots and pepper.
  3. Mix all the vegetables and fry until done.
  4. Cut the washed meat into cubes, and repeat with the potatoes.
  5. Place the meat in a saucepan with a deep bottom, pour in 2-2.5 liters of water, add salt and bring to a boil.
  6. After boiling, skim off the foam and add the potatoes.
  7. When the potatoes are almost cooked, add the vermicelli.
  8. After this, wait for the soup to boil again, then add the frying vegetables.
  9. Cook a little more, season with spices and herbs.

Turkey Noodle Soup

The next version of the first course uses noodles. The list of ingredients includes the following products:

  • green beans – 150 g;
  • turkey meat – 0.3 kg;
  • noodles – 0.1 kg;
  • carrots – 3 pcs.;
  • onions – 2 pcs.;
  • soy sauce – 15 ml;
  • celery – 2 stalks;
  • garlic – 4 cloves;
  • chicken broth – 6 tbsp.

The cooking process includes the following steps:

  1. Sweat the chopped onions and carrots in a saucepan, adding a little vegetable oil.
  2. After that, add garlic to them, fry the vegetables for another 5 minutes, add celery.
  3. Season the roasted vegetables with spices and sauté for another 3 minutes.
  4. After this, pour chicken broth and sauce into the vegetables.
  5. When the water boils, add the noodles and season with bay leaves.
  6. After boiling, simmer the soup for another 5 minutes, then add the fillet pieces.

Cheese soup with turkey

For lovers of French cuisine, a delicious turkey and cheese soup is a good option. Preparing this dish requires the following ingredients:

  • carrots – 1-2 pcs.;
  • processed cheese – 0.2 kg;
  • onions – 2 pcs.;
  • turkey fillet – 0.5 kg;
  • potatoes – 5-6 pcs.;
  • butter

First of all, prepare a deep saucepan with a capacity of approximately 3 liters. Then follow the simple instructions:

  1. Pour the washed fillet with water, after boiling, add peppercorns, 1 tsp. salt, bay leaf. Cook for another 20 minutes.

Turkey fillet soup with noodles is not a greasy soup, almost dietary, it can be prepared quickly, without much hassle. White turkey meat is very tender, healthy and low in calories, which is why the soup turns out so light, suitable even for baby food (if you don’t add hot spices).

To prepare the dish you need: 500-700 grams of white turkey fillet, 3-4 potatoes, 1 cup spider web noodles (made from durum wheat), 1 small onion, 1 carrot, vegetable (melted butter) oil for frying, salt to taste, optional - 1 sweet bell pepper, 1 bay leaf, green onions, dill (parsley, cilantro), ground black (white) pepper.

Since white turkey meat cooks very quickly, we’ll start by preparing the roast, otherwise there won’t be enough time for it later. Cut the onion into half rings or cubes and fry in vegetable or melted butter until transparent. After this, add carrots cut into strips (or grated on a coarse grater) and thinly sliced ​​sweet bell pepper to the pan.

We wash the meat and cut it into cubes.

Place the meat in a pan, add 2 - 2.5 liters of water, add a little salt, bring to a boil, remembering to skim off the foam, then immediately add the potatoes into the pan. When the potatoes are almost ready, add the spider web vermicelli to the pan,

stir, let the soup boil, and immediately add the frying.

Cook the vermicelli until cooked, remembering to add salt and pepper to taste, then remove the pan from the heat. That's it, the soup is ready.

Turkey soup is not much different from regular soup in composition, except for the meat used. But you can prepare it in different ways.

  • three spoons of rice.

  4. 10 minutes before the end of the program, you can add greens.

  • one carrot;
  • about 500 grams of turkey fillet;
  • three potatoes;
  • seasonings and herbs as desired;
  • 50 grams of rice;
  • bulb.

Cooking process:

  1. We turn the meat and onions into minced meat in any convenient way, season it with salt and pepper, and form small round cutlets.
  2. We put a pan of water, and when it boils, put the diced potatoes and carrots in strips into it.
  3. After about 5 minutes, add rice to the contents, add the prepared meatballs, and keep on the fire for 10 minutes.
  4. All that remains is to season the soup with spices, cook for another five minutes and you can serve.

First course with vermicelli

Light, almost dietary soup, despite the presence of vermicelli.

First of all, boil the turkey on the bones, washed under running water. It is important to fill the meat exclusively with cold water and periodically remove the resulting foam. In order for the broth to acquire a beautiful golden color, you can let the whole onion cook, right in the husk, and simply throw it away after cooking. While the turkey is cooking, let's prepare the dough. I like it when the dough is prepared with the addition of boiling water, then it is like custard.
