Cooking method:

In a deep container, combine eggs, sugar, salt and beat with a mixer or whisk until foam appears.


Here we add kefir, sifted flour and beat thoroughly until the last lump disappears.


We extinguish soda with boiling water, then at the same time, while stirring, pour in a thin stream into the dough.


Add vegetable oil, mix well and leave to brew for 15 minutes.


Lightly grease a hot frying pan with oil, pour a ladle of dough into it and spread it all over the bottom in a circular motion.


Now fry on each side until golden brown.


Then we lay out the finished pancakes in a plate on top of each other in a stack, while lubricating each with butter.

Pancakes without eggs


Ingredients:

  • Kefir - 500 ml
  • milk - 250 ml
  • wheat flour - 300 gr
  • sugar - 2 tbsp. l
  • soda - 1/2 tsp
  • vegetable oil - 2 tbsp. l
  • salt - to taste.

Cooking method:

Pour milk into a small ladle, put on fire, bring to a boil and immediately remove.


In the meantime, pour kefir into another saucepan, put on low heat and heat, but in no case boil.


Then pour soda into the heated kefir, mix and thus extinguish it. Add sugar, salt there, stir and remove from the stove.



Now pour in a thin stream of still hot milk and at the same time stir until the dough is smooth, if it turned out to be watery, add a little flour.


It remains to add vegetable oil and mix well.

The finished dough should turn out like liquid sour cream or heavy cream, but in no case like water.


Fry the pancakes in a hot frying pan until golden brown on both sides. At the same time, when you turn them over, be careful (do not tear) use a special spatula or knife.


Put on a flat plate and serve.

Delicious pancakes without soda


Ingredients:

  • Flour - 1 cup
  • eggs - 1 pc.
  • kefir - 450 ml
  • sugar - 2 tbsp. l
  • sunflower oil - 4 tbsp. l
  • salt - 1/4 tsp

Cooking method:

1. Pour kefir into a suitable bowl (it is best to use homogeneous kefir, with a low percentage of fat content), drive in an egg here, add sugar and salt. We mix all the ingredients into a homogeneous mass using a culinary whisk, mixer or a regular fork.

2. Add vegetable oil and mix it into the dough. Personally, I do this almost always when frying pancakes or pancakes, because in this case you do not need to additionally oil the pan in which they will be fried.

3. Add the sifted flour a little at a time and mix well.

4. Fry without soda in a preheated (preferably) thick pan, on both sides until golden brown.

5. Coat the finished dish with a cooking brush, melted butter in the microwave.

Serve for tea with your favorite jam, honey, condensed milk or sour cream, you can also wrap the filling in them, but they turn out very tasty on their own!

Add flour to egg mixture. The amount of flour needs to be regulated, it is indicated approximately, it all depends on the density of kefir and the quality of the flour. The dough for pancakes should turn out like liquid sour cream. Mix thoroughly so that there are no lumps.


Since pancakes on kefir are very “sticky”, the pan must be lubricated with oil before each. Let's use the convenient old "grandfather" way - half a potato planted on a fork.


We heat the pan, grease with oil. And pour a ladle of dough, rotating the pan, distribute the dough over the entire surface.


Turn over very carefully when the entire surface is covered with holes. Lubricate each pancake with butter.

Kefir pancakes have some nuances - the dough should be thicker than if you cooked them in milk. It is more sticky, so you need to be sure in your pan. They need to be baked on medium heat, because such pancakes burn quickly enough.

Kefir pancakes are one of my favorites. These pancakes are ideally combined with any filling, both sweet and salty. You can simply grease the pancakes with butter and sprinkle with sugar, as in childhood. Can be served with honey, sour cream or jam. You can also make pancake roll or cake. Try these delicious and thin pancakes!

Compound:
Kefir - 500 ml
Eggs - 3 pcs.
Wheat flour - 120-150 gr
Soda - 0.5 tsp
Salt - 0.5 tsp
Sugar - 1 tbsp. l.
Sunflower oil - 2 tbsp. l.

Cooking:


In a bowl, beat the eggs with a whisk, add sugar, salt and soda and mix well again.



Pour in sunflower oil and add the sifted flour. You may need more or less flour, you need to look at the consistency of the dough.



Stir the flour so that there are no lumps and then pour in the kefir. Mix the dough well and let it rest for about 20 minutes. Then you can start frying.



Before the first pancake, grease the pan with oil, remove excess oil. You can chop a piece of raw potato on a fork, dip it in oil and thus grease the pan. Pour a portion of the dough into the center of the pan and tilt to distribute the dough evenly.



Fry all the pancakes in this way.



Serve pancakes with tea, milk, jam, sour cream, as you like. Bon Appetit!

Thin pancakes on kefir with boiling water

Thin pancakes with holes on kefir - tasty, satisfying and beautiful. The perfect breakfast or dinner for every day. If you want the pancakes to be really thin, take kefir with a low percentage of fat content. And you need to add boiling water to the dough - the dough turns out to be custard, and the pancakes from it are very tasty, thin and delicate, with a perforated structure.


Compound:
Flour - 1 cup
Kefir - 1 glass
Boiling water - 1 cup
Eggs - 2 pcs.
Salt - a pinch
Sugar - 2 tbsp. l.
Vegetable oil - 3 tbsp. l.
Soda - 1 tsp

How to cook custard pancakes on kefir



In a large bowl, beat the eggs with salt with a whisk and then pour in boiling water, constantly stirring the contents of the bowl with a whisk. Work intensively with a whisk to get a homogeneous mixture.



Now let's pour kefir.



Add soda and sugar. Mix the dough. Bubbles will appear on the surface of the dough - this is kefir reacting with soda.



Pour in any vegetable oil, it is better if the oil is odorless.



Gradually add the flour and mix the dough thoroughly with a whisk so that no lumps form.



In the end, we should get such a pancake dough. Let's let it sit for ten to twenty minutes.



We put the pan on a strong fire, grease the surface of the pan with vegetable oil, pour a small portion of the dough into the pan. Turn the pan in a circular motion so that the dough is evenly distributed over the surface of the pan.



As soon as bubbles appear on the surface of the pancake, and we see a brown border around the edges of the pancake, turn the pancake over to the other side.



Bake pancakes on both sides until golden brown. We bake the next pancake, no longer greasing the pan with oil.


Ready-made pancakes are served hot with your favorite jams, honey, butter, sour cream. We serve thin pancakes with holes on kefir with orange jelly. Bon Appetit!

If you're craving pancakes but find there aren't any eggs in the fridge, don't fret! Pancakes can be baked without eggs.

Kefir - 1.5 cups
Wheat flour - 100-120 gr
Soda - 0.5 tsp
Salt - a pinch
Sugar - 2 tbsp. l.
Sunflower oil - 2 tbsp. l. (in the dough) + for frying

How to cook pancakes on kefir without eggs


Heat half of the yogurt and pour into a bowl, add soda, flour, sugar and salt. Stir so that there are no lumps.



Pour in the remaining kefir and stir again.

Grease the pan sunflower oil, pour half a ladleful of dough and evenly distribute. Fry until the surface of the pancake is tightened and not sticky.



It is more convenient to turn the pancake with both hands, prying the edge with a spatula. Grease the pan before each pancake.



Pancakes after frying put briefly in a plastic bag.

Mix eggs, salt, sugar, kefir, fermented baked milk. Mix until the spices dissolve and bubbles appear on the surface. Then add a little more flour. Mix everything thoroughly until a homogeneous mass without lumps.

Usually, in order for kefir pancakes to turn out lush and ruddy, they are prepared with the addition of soda, or, of course, you can not add it. Instead, use yeast. And it will be better if you let the dough rise several times.

Kefir or curdled milk - half a liter
Yeast - 10 gr
Sugar - 1 tbsp. l.
Salt - 1 pinch
1 glass of boiling water
Flour - 1.5 cups
Eggs - 3 pcs.
Vegetable oil - 1/4 cup (50 ml)

How to cook thick yeast pancakes on kefir

Whisk the eggs with a pinch of salt and sugar. In a mug with 50 ml. warm water to dissolve the yeast. Kefir or curdled milk warm form pour into the egg mixture.



Bring to a homogeneous consistency and sift flour into a bowl. Add flour little by little, stirring constantly. Knead the dough until the state of thick sour cream.



Dissolved yeast is introduced into the bowl with the dough. Then, in a thin stream, pour in one glass of boiling water, and stir continuously. Thanks to boiling water, our pancakes are custard, openwork.
It is better to knead the dough in a large bowl, because during the rise it will double in size. Cover the dish with the dough for pancakes with a light napkin or cover with a lid. Leave in a warm place for about one hour.



Then, when the dough is ripe, these bubbles should appear on the surface. Add vegetable oil and mix. Now you can start frying pancakes. To make the frying process faster, use two frying pans.



We bake yeast pancakes in a well-heated pan, on both sides. The pan does not need to be lubricated with oil, as the right amount of oil is in the dough. You can watch the holes appear on the dough when it is in the pan.


We serve pancakes for tea with any marmalade or jam. Yeast pancakes on kefir turned out so soft, porous, tasty and beautiful. Bon Appetit!
